Come learn about the opportunity to participate in the spring 2025 mosaic, Green Cuisine: An Exploration of French Culture, Food Systems, and Economics. Not only has France's culinary culture long been celebrated around the globe, but it is also one of the world’s leading producers and exporters of food. Building on anti-food waste policies, France recently adopted an ambitious law to shape a system-wide transition towards a circular economy and encourage businesses, municipalities, and citizens to eliminate waste. This mosaic will examine these new policies in relation to cultural habits and agricultural practices to gain a comprehensive understanding of France’s food system and the extent to which it contributes to a sustainable world. Students can expect to spend 2-3 weeks in France in March 2025 traveling to different regions of the country reputed for their successful attempts at redefining French food culture through innovative policy making, food production and waste management systems. Applications are due on September 15, 2024.
