Russian Food Culture: From Fermentation to Organic Gardening Russian cooking is rarely counted among the world’s great cuisines. And yet Russia’s food culture has influenced the way that we eat every day in America, since the idea of having plated food served directly to the table originated at the Russian imperial court. Together we will learn about Russian food traditions of fermentation, canning and preserving, including a “show-and-tell” of these colorful and healthy products. We will also talk about the role that home gardens have played in 20th-century Russian history. Finally, we will investigate the connection between Russia’s climate and its most popular food products (potatoes, beets, buckwheat, black bread), including a sneak peek into a traditional Russian home kitchen. Registration deadline: March 9.
