Come to an info session about the Spring 2027 Mosaic "Agritourism, Caribbean Environments, and Food Culture on the Isle of Spice: A Grenada Mosaic" to learn more about this exciting opportunity.
The Agritourism, Caribbean Environments, and Food Culture on the Isle of Spice mosaic invites students to participate in a semester-long exploration of Grenada’s evolving agritourism industry and its Afro-Caribbean culinary traditions. Through classroom learning and an immersive 10 day visit to the Caribbean’s “Isle of Spice” in spring 2027, students will learn how the island’s colonial history of agricultural production continues to shape contemporary food systems, while also discovering modern innovations in sustainable farming and gastronomy that appeal to global tourists. Meetings with Grenadian historians, farmers, chefs, and tourism professionals will offer first-hand insights into how the merging of agricultural and food economies impacts the daily lives of Grenadian people. Cultural excursions and guided tours of working plantation estates, spice cooperatives, rum distilleries, artisanal chocolate factories, and heritage sites will deepen students’ understandings of Grenada’s food landscape. Additionally, visits to local villages, open-air markets, and restaurants will afford opportunities to taste indigenous ingredients and spices such as cassava, cacao, and nutmeg, as well as to cook Grenadian recipes, including oil down, the national dish.
Alongside these field experiences, students will develop creative and research-driven projects rooted in qualitative methods and food writing.
